Our Chipotle Baby . . .

I found this pic today (by found, I mean I was looking at it hanging on the wall of my cubicle at work), and thought I would tell you all a funny story about two of the great loves of my life.

As I was contemplating telling the story (that we will eventually get to in the course of this post), I realized that I have been utterly remiss in communicating my love of all that is Chipotle. I have told you all about the men in my life, and I brag on my hubby (who rocks!) every week, but I have yet to even mention Chipotle. I'm so sorry Chipotle, I love you, and I miss you terribly - I'm hoping I can convince Austin to come visit this weekend!

If you have never enjoyed a Chipotle burrito, you, my friend, are seriously missing out! Imagine if you will, the most beautiful, gleaming, modern decor, ecclectic, but very tasteful, music pumping through the sound system, and food so delectible in its all-natural goodness, that it makes my mouth water just thinking about it. Do you have that image in your head? Good. Now put all of that into a fast. food. restaurant!!!! Too good to be true, NO!! It exists, in all it's cheesy, spicy, tomatoey goodness in the form of Chipotle Burritos!!!!

My love affair with the burrito the size of my head began when I was in high school, though I remember it like it was yesterday. The rumor had been flying around school all day that a new Mexican place was opening at Union and Academy, and as part of the training for their staff they were offering free burritos to everyone who came through the doors! Not the first 50, or even the first 500, EVERYONE!!! Free food, and an excuse to get off campus was enough for us, so my friends and I piled into my family's minivan (I'm not sure why I was driving the minivan on this day, but I distinctly remember that I was because the driver's door latch had a pesky habit of letting go right when you were going about 45 miles an hour down Palmer Park Blvd, scary . . . but, I digress). When we arrived at the restaurant, the line was snaked through the entire restaurant and out the door. We all knew that we had only 45 minutes before 4th period started, but we were far more interested in free burritos. When we were about half-way through the line, we spotted our history teacher (for whose class we were inevitably going to be late, if not miss all together) leaving the restaurant. He just shook his head and laughed. We all made our way to the front, ordered and jumped back into the van for a very fast ride back to school. I think we were about 35 minutes late for our hour-long class, and we ate our burritos at our desks. Our teacher was really cool, and since we didn't do that kind of thing too terribly often, didn't make a big deal out of it. And the rest, as they say, is history.

After our love at first bite, I was hooked. Chipotle was at least a weekly trip for me, with or without a friend, and once I ate two burritos in one sitting (quite a feat for someone of my appetite). When I left Colorado Springs to go to college in Dubuque, Iowa, I was crushed to learn that there was no Chipotle in Dubuque, or in the entire state of Iowa for that matter! How was I going to last an entire school year without Chipotle. The closest one was in Madison, Wisconsin - a 2 hour drive both ways, but I somehow conned friends to make the trip with me multiple times throughout the year! (I didn't even have a car while I was at college, but I had awesome friends and an stupendously amazing boyfriend who took me every time I got the craving :) ). I had quite the system - I would order 1 burrito, and 1 burrito bowl with an extra tortilla, eat the assembled burrito in Madison, and take the burrito makings back to DBQ to be enjoyed in a day or so (any longer than a day, and it was a little gooey).

I have now eaten Chipotle burritos in 6 different states, and it never gets old! This picture is from the grand opening of a Chipotle in Phoenix, AZ. (We just happened to be there on opening day while we were visiting my grandfather for his 80th birthday!)

Thankfully, Austin loves the burrito almost as much as I do, so he makes sure that we get some whenever we are in an area that has them!

As I had said, there were absolutely zilch, zero, nada Chipotle locations in the entire state of Iowa, so when I went and fell in love with my handsome husband and we decided to live in Iowa, it was a very difficult transition for me. We wrote many e-mails to the proprietors (who always answered, and were very upbeat and polite when they did so) begging them to bring a Chipotle to our fair state.

While planning a weekend trip one evening, we were surfing the web to find out if there were any Chipotle stops along our route only to see that they had finally built a Chipotle in Iowa! Iowa City!!!! (Which is a shorter trek than between Dubuque and Madison!)

It was such fabulous news! I whipped out my cell phone right then and there and called my parents' house in Colorado! My parents are notoriously difficult to reach at their home, so I left a message. In my excitement, it sounded something like this:

"Hey everybody, call us as soon as you get this, we have the best news!!!"

Yep, they thought we were having a baby!

Well, we cleared up that little misunderstanding, and informed them of our elation over the new Chipotle! They were very excited for us and shared in the joy of our "new arrival."

For Christmas last year, my sister gave us a gift certificate for Chipotle (cleverly packaged to look like a burrito wrapped in tin foil :) ), so this picture is me and Austin in our "new family" pose.

The Hippies Were Right!

Lol! This slogan appeared on an Earth Day T-shirt in Wal-Mart that Austin loved. (He didn't actually end up purchasing said shirt as he is the most frugal person I have ever met, darn Dutch blood, but that's another story for another time.) And as crunchy, or tree-hugger-ish as this may sound, I really (kind of) agree with it. They weren't right about everything, in fact they got a lot of things waaaaaaaaay wrong. In fact I disagree with their views on nearly everything (drugs, sex, etc.). Everything except their opinions about the way we treat the planet.



The older I get, and the more my brain shifts into "mothering" mode, the more I think about the state of our planet, how what I do impacts the environment, and what kind of world I want to leave for my (future) children. I am not what I consider extreme in my views, but I do believe in making the small changes that positively impact our world.

Awards!??!?!!!

Oh. My. Word.

I am so overwhelmed by bloggy love right now!

Our list of ~My Husband Rocks!~ Friday participants grew a TON this week! (Can you believe how long it is?!!?! I am floored!)

And, I have received FOUR new blog awards! I started this little blog less than a month ago thinking that my family members and maybe some close friends would read it to kep up with our "adventures," and give me the obligatory "hey, read your blog the other day . . ." every now and again. I have made so many fabulous friends and am daily encouraged by the shared laughs and ideas and hurts and triumphs of people all over the world brought together through the "magic" of the Internet. Yes, it can be a scary place at times, but I love this side of it, so thank you all, from the bottom of my heart for taking the time to visit my little corner and share your comment love :).

~ My Husband Rocks! ~


Wow! It's Friday already! Although I'm not quite sure where this week done got off to, I'm really glad that the weekend is almost here!



Thank y'all for tuning in for another fabulous ~My Husband Rocks!~ Friday! I'm so excited to see what everyone has to say this week! I hope that everyone who participates in this little "carnival" not only posts their thoughts on Fridays, but makes sure let their husbands know that we think they rock, not just on Fridays, but every day! A wife's respect for her husband can truly energize a marriage!



Austin has an amazing sense of adventure, and he is very spontaneous! I remember one evening when we were in college, we were sitting in one of the common areas with Florence, a girl in our class who was from Honduras. We were chatting about our summer plans, and she said, "You should come visit me!" Thinking, I'm sure, that it was a rather remote chance that we would actually take her up on the offer. Austin loved the idea, and immediately went to his dorm room for his laptop computer. He started right away researching plane tickets and planning a way to make this dream trip a reality.



I believe that this was the moment that I knew without a doubt that I would spend the rest of my life with him. You see, I have always been a huge dreamer/planner. When I was about 12, I wanted a horse, so I worked out an entire savings plan for how I would get the money, researched a place where I could board it, read all of the books the library had on horse care and showing, and when it got to actually putting the plan into action - nothing. I also LOVE to travel, so when we were younger, my sister, Kelli, and I would pull out the big atlas, open it randomly and drop our finger on a spot then plan an entire trip to the location our finger landed upon. Granted, we were just kids when we made these plans, but they never really left the dreaming stage. (But, Kelli, I would LOVE to make this dream a reality!)



So, when Austin came up with one of these (seemingly) hairbrained ideas, and then made it happen, (Yes, we actually spent 14 days in Honduras the summer after our college graduation!) I was absolutely hooked!




This picture was not taken in Honduras (actually, we cannot find any of the pictures we took in Honduras, the memory card was either completely erased, or jumped out of the camera somewehre between San Pedro Sula, Miami, and Chicago). This was actually at the Cheyenne Mountain Zoo in Colorado Springs. We were visiting my family the summer before our wedding, and they were letting people hold a python to get donations to save the hippos. (I know, it doesn't make a whole lot of sense, but hey - we got to hold a python!) This picture just screams "adventure" to me, and since we don't have any Honduras pics, I thought I'd include it in my "adventurous/spontaneous" post :)



Austin can match me step for step with big dreams, and crazy plans, and he actually has the gumption to make it happen! He so totally rocks! :)

Gi-gu-mongous Calendar How-To :)

As promised, though admittedly very late, here are the instructions for creating your very own massive wall calendar. As much as I would like to impress you all with my fabulous creative genious and tell you that I came up with this idea all by myself . . . that would be a big, fat lie. :) I came across this idea while thumbing through an issue of Cottage Living (thank you Thelma)! The link will take you to their very precise and detailed instructions.



I skipped many of the steps and eyeballed a lot. I was running out of ribbon near the end, so a lot of my bottom rows are pieced together from my scraps! I did use their numbers and day and month names - very neat and easy! I do not, however, have the cork-board base (although I think it would be very useful), I was using to tape and sticky tack for hanging all of our happenings.



Until - using ribbon, paper clips and mini binder clips - I added this new feature, inspired by The Nester:



I really like those hangy clippys :)



And no, I am not attending a baby shower on the 23rd, nor do I have a doctor's appointment on the 14th, but we did not have any "happenings" on the calendar yet, so I made some up :)




There you have it! (Aren't you proud of me? I'm already in July!??!)

Tea Party!!!

Today Jan & Tom are hosting a blog tea party! Hello to all of our tea party guests!



I love tea parties! I always have ever since I was a little girl, and my mom would pulled out the fancy cups and saucers for the very first time and taught my sister and I to drink with dainty little sips while holding our pinkies in the air! My mom had a beautiful collection of tea cups, and every so often my dad would add to it, or she would pick one up at a vacation destination. Both of my grandmothers and both great-grandmothers that I can remember meeting also had their own collections of the beautiful china cups and saucers.


The cup at the top of this post belonged to my great-grandmother Hilderbrand. (She was my father's mother's mother.) After she passed away each of the granddaughters and great-granddaughters got to select a cup from her vast collection. I drank my tea out of that cup this morning to get myself into the tea party spirit.






Please forgive my poor photography skills, but this beautiful little cup belonged to my grandmother on my father's side. She was a very dear lady, and she used to watch my sisters and I often while my parents were away. She even lived with our family a couple of different times throughout my growing up years. She was very good at making you feel special. After I got my driver's license I would drive over to her apartment after school and she would have a sweet little spread all set up for us to enjoy together. She passed away a month before I graduated from high school, and had set aside a teacup for each of her granddaughters to be given to us on the occasion of our weddings. When we were opening presents the morning after our wedding, I was surprised to find a small square box with one of Grandma's handmade cards attached. On the card, my dad had written an explanation of the gift which was this beautiful teacup and one of grandma's lace hankerchiefs. Both are displayed on our corner shelf in the kitchen.

My favorite treats that she used to make are called "Buttons & Bow Knots"

(This recipe card was included in a book of family recipes that my parents gave to us for our wedding :) )

Just a quick little explanation of this recipe. First, the dough will be very, very sticky, so I use a TON of flour when I'm rolling them out. And second, you cut it with a donut cutter, so you get a ring and a "donut hole." Bake the holes as is - these are the "buttons" - and twist the rings so they look like a figure eight - "bowknots." Also, be very liberal with the melted butter and sugar when you're coating them! (The best part is the absolute lack of any nutritional value whatsoever!) I'm sorry I don't have any pictures of what these little beauties look like, but they're fabulous! If you try them, let me know what you think!

~ my husband rocks! Friday ~ Silliness ~


Welcome to yet another wonderful Friday here at the great adventure! I'm so glad that you're joining us for this week's installment of ~my husband rocks! Fridays~



I've always loved that Austin and I can just be silly together! Don't get me wrong, he's a very mature and responsible individual, but he just doesn't take himself too seriously!



Just this Tuesday evening while we were running our Shopper route, (only one week to go, I am soooooo excited . . .) we were both feeling a little bit goofy (the smell of newsprint and dust in the evening, I tell ya), and enjoying our marshmallow pinwheel cookies just laughing and giggling over the silliest things.




This pic is of Hoss with our friends' son Carson. It was taken one Saturday afternoon while we were all shopping in Des Moines. Austin was carrying him through the store at this point. Carson would make a noise, Austin would mimic him, and then Carson would just howl with laughter! This went on most of the way through Target and even a little bit after we got into Barnes & Noble. It was the sweetest thing to watch!



We also like stupid-humor movies. A lot. You know the ones Talladega Nights, Anchor Man, Blades of Glory (what can I say, Will Farrell is hillarious) . . . and while I think they are very funny and entertaining by themselves, I absolutely prefer to watch them with Austin. He has an absolutely infectious laugh, and you know something was REALLY funny when he is laughing too hard to laugh out loud, so he he just kind of snickers through his teeth while trying to get enough oxygen to his brain! Good fun!


I love that we can spend every day together and still have a blast just goofing off! My husband so totally rocks!

God Bless America!




Today is Thankful Thursday, and this week I am so thankful for the opportunity to rest and play on this up-coming long weekend. I am thankful that today is like the Friday of my work-week, and that next Tuesday will be the final day of our Shopper contract.

Tomorrow is Independence Day, and I am thankful for all of the brave men and women who sacrificed so much to fight for the freedoms that we enjoy today. For the men and women who are fighting now around the world to protect those freedoms, and to live in a country that offers such freedom. God bless America!

Ugh!!!

It's Real Raggin Wednesday over at Staci's Heart, and I was remiss last week, so here goes! :)

Today I will rag on . . . GNATS!!! Those pesky things are everywhere this year, and they are driving me to distraction! I cannot recall ever in my short yet full life having a season so utterly teeming with the nasty little buggers! Last night while on the shopper route, I looked across a field and it was literally like a fog of gnats! And they're not just in the fields out in the "country" either - everywhere in town is inundated with them as well! It's enough to make you want to hibernate through the one of the four most beautiful seasons of them all! :)



I suspect that the abnormally large gnat population has something to do with the remaining flood waters. Now that they are receding in most areas (thank the Lord), what's left are gigantic puddles (mini-lakes) in fields that have nowhere to go because the drainage isn't set up for such volume. So, the water sits stagnantly becoming a breeding ground for the disgusting pests!!!

This unexpected phenomenon has the general populace rushing to the various grocery/convenience/drug stores for the following items: vanilla extract (like for baking a cake, or chocolate chip cookies), Absorbene Jr. (as in the arthritis pain medication), and Listerene (such as one would use to combat chronic halitosis). They say that putting vanilla or the A.J. behind your ears, on your wrists, and on your ankles is better than bug spray, and putting the Listerene in a spray bottle and spraying around your deck, porch, patio, or dog run is like fogging! Who knew?

Another thing I never knew is that gnats bite! Seriously! I am currently suffering from a rather painful bite on my right ring finger, very annoying.

As per Staci's rules, I must now forgive the gnats. Gnats, I forgive you, I know that you cannot help but be pesky, it's your nature. I do not pretend to understand the purpose for which you were created, but I do not doubt that there was one. (The Creator's pretty cool like that :) )

Scheduling Time


Today's challenge from 31 Days to Clean was to create a schedule to make better use of our time. I am definitely one of those people who loves to plan, but has trouble sticking to that plan; therefore, I have made my schedule very flexible, left plenty of open space. I have in bold the activity which is the most important to complete during each block of time. I'm going to do my very best to stick to this schedule all week, even if it feels a little unnatural at first, and then at the end of the week, I'll re-evaluate and shift whatever needs to be changed. When I was very young I would listen to the Adventures in Odyssey adaptation of the story behind this hymn over and over again. To this day it still astounds me that a man who lost so much could write such a powerful testament to the Lord's love and faithfulness. This is probably a reflection of my lack of faith, but it is such a powerful lesson for me.



I am deeply comforted to "let this blessed assurance control" when my life seems to be spinning completely off the tracks, and I know that I have no control of my own over a situation, God is not surprised by the circumstances that shock me and he is and always will be steadfast and faithful to protect and provide.

~ my husband rocks! Friday ~ Our Engagement Story




Welcome to week 3 of ~my husband rocks! Fridays~ I'm so glad you are joining us.



My post for this week is a little trip down memory lane. Well, it wasn't really long enough ago to warrant a lane, so we'll call it a walk around memory block. :)




On the afternoon of Friday, February 16, 2007, I was sitting at work, minding my own business when Austin came through the front door. He asked me a few random questions and then out of the blue said, "You need to come with me." I kind of looked at him in disbelief before I said, "It's only three o'clock, I can't come with you, I work until 5!" He calmly repeated, "I know, but you need to come with me right now." I was having trouble wrapping my mind around the situation, so I said, "OK, let me ask my boss." At this point, Austin was laughing a little bit as he replied, "I already asked her, but you need to come with me." I quickly shut down my computer, gathered my things and followed him outside to his truck.

In the front seat was a dry-cleaning bag which contained his suit. He took me back to my apartment, and as he dropped me off said, "You have 30 minutes, dress to match this suit! And bring some warm clothes to change into later."

I ran up to my apartment, and hastily prepared for something fancy (although I had no idea what we were going to do). I was ready in record time, and he whisked me away to Des Moines (which is about an hour drive).


When we arrived, he made his way to downtown through the snow that had started to fall on our way there, and as he was carefully weaving through the one-way streets, he told me to close my eyes. We parked the truck and entered the Hotel Fort Des Moines. He walked through the lobby, leading me to the restaurant on the ground floor. There we enjoyed the most delicious meal I have ever had in my life. I had the salmon, and Austin ordered the New York strip. Both meals were absolutely wonderful!


As we were sitting at dinner, several other couples came in and were seated at tables near ours. Each of these couples mentioned to the waitress that they had tickets to "The Phantom of the Opera," and could they please have their food in time to eat and make it to the show.



The first time we overheard this comment, I looked at Austin in surprise and said, "Phantom, I didn't even know that was in town!" (Being totally honest.) Austin looked back at me, appearing for all the world to be as surprised as I was, and said, "Neither did I, we should see if they have any tickets available at the door!" At that, I launched into a fifteen minute protest about how ridiculously expensive the tickets would be and how we should just drive back home and rent a movie. Austin let the subject drop for the rest of the meal, and after we had finished and paid we got back in the truck and headed (I thought) for home.


Not being terribly familiar with downtown Des Moines, I didn't realize that Austin was headed for the Civic Center (where the Phantom of the Opera just happened to be taking place). He pulled up to the valet parking section and told me to get out of the truck. Again, I began to protest about how expensive tickets would be if we bought them at the door. To which he responded "How about we just use these tickets that I bought in October?" as he pulled a packet of tickets out of his coat pocket. Needless to say, I was surprised (again) and speechless (which does not happen often)! Because he had purchased the tickets so early, we had the most amazing seats! About 10 rows back from the front and off to the side just a little bit. We could see EVERYTHING in spectacular detail! Our seats were so close that we could feel the heat of the pyrotechnics! It was ABSOLUTELY FANTASTIC!!! After the show we headed back out to the truck, and I thought that the evening was over - what a wonderful, romantic surprise! Right?


WRONG! We drove a few more blocks when the GPS unit announced that "you have reached your destination." I looked at Austin and incredulously asked "There's ANOTHER destination?!!?!" He just smiled at me and began to gather up the warm clothes that he had wisely reminded me to bring along ("Just in case we want to go shopping or something while we're up there!"). We had just arrived at the Brenton Skating Plaza

which is an outdoor skating rink. We changed into our warm clothes and borrowed some skates. The front lobby area had seemed rather empty, but it wasn't until I reached the ice that I realized that we were the only two people in the whole place! It was a cold night, so I thought that maybe it was just a coincidence that no one else had decided to come skating, but I asked Austin "When do they close?" and he answered that they close at 10:00 pm. Well, it was already well after 10:30 pm, so I gave him an "are you serious" look, and he laughed and said, "Yeah, they're open just for us!" I thought he was being silly, so I asked him about three or four times if he was serious. He just laughed and we skated around a little bit more. It was a little bit cold at the outdoor rink, and it had started to snow again, and Austin asked if I was ready to go. I told him sure, and we started to skate towards the exit. He grabbed my hand and said "Well, there was one more thing!" and he (very carefully) knelt down on the ice, and as the snow was gently falling on us, he asked me if I would marry him.

I said yes!

As he was standing back up, he kissed me and then said, "And if you'll look over my right shoulder, my parents have been over there taking pictures!"

No, this is not the closing scene to an Oscar-winning drama, this actually happened in my real life! It was without a doubt the most romantic, wonderful night of my entire life!



This is just another reason why my husband rocks! And this was before he was even my husband!

Thankful Thursday!





Today is my very first Thankful Thursday post, and I'm pretty excited about it!


I have so much to be thankful for!


I am thankful for my wonderful husband who loves me and who is committed to me!


I am thankful for my amazing family - my fantastic parents and in-laws who love me like their own! Our wonderful siblings (all of you! Tom, Ashley, Kindra and Kelli!) I love you all so very much!


I am thankful for our friends! I love you all, and it has been so fun having you here this week Doobie, and I'm looking forward to the 4th!


I am thankful for new blogging friends, even though you are only real in my computer (lol!) I still love you :)!


I am thankful for our beautiful home and the fact that our town was spared damage in all of the crazy storms and flooding that Iowa has seen lately.


Most of all I am thankful for Jesus, and His love for me and His absolute patience with me - even when I am completely unlovely. :)

~ my husband rocks! Friday ~

Happy Friday everyone!




Welcome to another installment of ~my husband rocks! Friday~



The decision to purchase a "fixer-upper" was not a difficult one for Austin. Throughout his life this has been the pattern for his family. All through his growing up years they would move into a house that had great "bones" but needed a lot of TLC and they would go to town. The education he gained from this alone has been absolutely invaluable, but he is also one of those people who is just naturally competent at just about everything. With our home, even if he didn't know exactly how to do a project going into it, by the time he was done he was practically an expert.








Now I, on the other hand, had never used a reciprocating saw (I couldn't even tell the difference between a reciprocating saw and a skill saw), didn't know what a plumbing flange was, and had no idea about most of what we were getting into.




However, despite my inexperience, Hoss allowed me to be intimately involved in the entire process from start to finish. Not just picking out cabinets and countertops and door handles and paint colors - which he gave to me as well - but he patiently explained the processes and tools that would make our crumbling old Victorian into our dream home.



He is a skilled craftsman and a patient teacher, and that is just one more reason why my husband rocks!

The Heart of the Home

Our Kitchen!

When we first purchased the house, we were under the (naive) impression that all we would be doing was "updating." This house was simply going to be a "hobby." We look back now at our initial ToDo list and chuckle over how easy we thought the process was going to be.

  1. Repair plaster as needed
  2. update light fixtures
  3. etc.

Well, ALL new drywall, electrical, plumbing, siding, windows, doors, appliances, and flooring later . . . . we are finally on the "home stretch."



The way that the kitchen turned out completely exceeded my expectations! Not that I did not have every confidence in Austin & Bryce's ability to make it fabulous, but the odds were definitely not in our favor. You see, we had measured for new cabinets and purchased them (on an amazing sale at Menard's) when there was no drywall on the walls, and we had just the most basic of ideas about what we wanted the kitchen to look like. As often happens with remodelling projects, every step takes much longer than you expect it to, so once the cabinets arrived, they had to live in the garage for just shy of a year while we finished framing and leveling and repairing termite damage (another LOOOOONG story for another time) and having drywall installed, taped, textured, and finished. Needless to say this is not the manufacturer-recommended process for installing kitchen cabinets and having them actually fit the way you had envisioned. Old homes are also not known of their plumb and level lines and surfaces.



This is what the kitchen (well, the spot where we ended up putting the kitchen) looked like before we started:



Remember, this house was divided into 5 apartments when we purchased it, so this space was being used as a child's bedroom/hallway between a family room and the dining room. The walls were covered in chalkboard paing (all 4 of them), and the carpet was really as red as it looks!


Behind this door (above) was the main floor furnace. There was also a furnace on the second floor. And this corner (right) is where our kitchen sink now sits.





Even with ALL of this craziness, and the odds stacked against them, my wonderful husband and father-in-law gave me the kitchen of my dreams! Come with me and we'll take the tour :)

This (above) is looking into the kitchen from the dining room. There used to be a wall between these two rooms, and the main floor furnace used to sit directly to the left of the exposed chimney. (This is the rear view of the 2nd before photo. The chimney was inside the wall, and we decided that it looked nice exposed. We still need to clean it up and seal it.) Every surface in this kitchen is perfectly level, and we could have a party inside the top cabinets without them even coming loose!
